1)You have to be in the Center! No matter how much we all tend to believe that if it's a good restaurant we would go even if it's located in the suburbs.Wrong. The Location has to be central and fairly accessible by public transportation or by car. (any Roman driven can find his way to a parking spot)
2)You need to have a retro look. The half-way, the in-between can guarantee you to stand on the good side of both potential kind of clients. The lovers of the "I wish nothing would change" and the "I wish something new comes along".
3)Your Bathroom floor is as clean as the glass of the front door. Many of us who have been customers of a restaurant, can surely remember the first impression from walking into a "new" bathroom. Is the floor clean? Is there any hand soap? Are there any paper towels..ext. Keeping a high standard of hygiene in the bathrooms is a must for the restaurant.
4)There is no direct competitor within a 1 mile range. Competition is a positive factor depending on the product that one is selling. But in this case having a direct competitor such as similar food, similar atmosphere, similar crowd, is a no go procedure.
5)The Staff is helpful even on a rainy day. Any waiter can accidentally drop a plate on his way to a table or back to the kitchen. However the behavior that defines a restaurant is to accept the mistake with a smile and move on.
If you are trying to figure out where the hell this place is, the answer is quite simple actually. Caffè Propaganda is on Via Claudia, right by the Colosseum!
The idealism of spreading the word (propaganda) is about a healthy diet rooted in the local traditions. The refined "Parisienne" atmosphere starts from the dice floor mats to the high ceilings and wide glass windows.
The food offered goes from 12.00 am to 2.00 pm. Salads, sandwiches and first courses offered by the chef Stephane Betmon, but also the plates of the Cucina Romana offered by the chef Arcangelo Dandini.
I have been to this restaurant on two different occasions. The first time I had fried eggs with cheese with crunchy spinach and almonds. The second time I had the "Propaganda" burger with cheddar cheese and fries. One of the best I had in town!
On both occasions the Staff paid attention to all the requests I gave and made sure that I was attended whenever I needed to. Any other Roman restaurant like Maccheroni (Via delle Coppelle) favored by its location and appeal doesn't pay much care how the customer is attended when needed.
The bathroom was particulary clean, as well as the restaurant plates, forks, knifes and glasses used on the table. Another plus could certainly be the large selection of high quality alcohol behind the bar counter.
The downside to its great appeal and good quality food is the price which can skyrocket if you choose several courses and wines. Overall I suggest this Caffè Propaganda for a nice Sunday brunch or a nice dinner with your friends on a thursday night out.
